We produce tomatoes only once a year, in August, when they are perfectly ripe naturally and in the field, this gives us a balanced acidity.

In our list of ingredients, only tomato appears because we only can tomatoes, without adding hardeners, acidulants, or preservatives. The tomatoes are peeled manually and the crown is removed, and we discard the juice that is lost in the processing.
