“Lacón con grelos” is a typical Galician dish, traditionally associated with the celebration of carnival.

Ingredientes:

For two people:

1 high-quality lacón (cured pork shoulder)

10 g of unto (pork fat)

1 jar of A Rosaleira turnip tops, 500 g net weight

2 large, high-quality potatoes

2 high-quality chorizos (Spanish sausage)

Salt

Preparación:

Cook the lacón and unto in plenty of water.

After 30 minutes, add the potatoes cut in half.

Remove when the potatoes are cooked.

Ten minutes before removing the lacón, add the chorizos and check for salt.

It is important that the lacón is cooked thoroughly.

Heat the turnip tops in the cooking water and serve on an attractive platter.
